RECIPE: Pumpkin Pie Protein Balls

Even though we follow a whole foods style of eating, we're human and still crave sweet treats from time to time.  Since it's fall and pumpkin pie season I thought it would be fun to create a treat that would satisfy our sweet craving and also pack a protein punch. 

 

 

What you'll need to make a batch of Pumpkin Pie Protein Balls (makes 12)

  • 2 heaping tablespoons Pumpkin Puree 
  • 1 teaspoon of honey
  • 1 cup of finely shredded carrots
  • 1 cup of almonds
  • 3/4 cup of pitted dates
  • 1/4 of flax seeds
  • 1 1/4 teaspoon of pumpkin pie spice
  • 1/4 teaspoon of cinnamon 
  • 2 - 4 scoops of vanilla protein powder 

Combine all of the ingredients into a food processor and then form into balls on a parchment lined baking sheet.  If the mixture is too running add rolled oats or more protein powder to soak up the liquid/moisture from the carrots and honey.  

Options: Freeze the protein balls and dip each ball into melted chocolate and re-freeze or drizzle melted chocolate over protein balls.  Additional add-in's chopped walnuts, pecans, and raisins.
